Aheli Eats | Akuri: Indian-Styled Eggs

I have a well-documented aversion to breakfast foods, which means that I’m always on the look-out for good breakfast recipes. Enter Akuri eggs. Flavorful. Spicy. And oh so simple. I found this recipe on Hitha On the Go. It takes about 10 minutes, and the best part is you can really use whatever spices you have around. I hope you enjoy.

Akuri- Indian Style Eggs

Ingredients:

  • 3 Eggs
  • 2 Tablespoons of Milk
  • 1/2 Jalapeño
  • 1/2 small white onion, minced
  • 1 garlic clove
  • 1 teaspoon ginger, minced
  • Salt & Pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1 tablespoon ghee
  • Cilantro, chopped
  • Toast
Tools:
  • Small bowl
  • Whisk
  • Small pan
  • Wooden spoon
 
Steps:
  1. Whisk eggs with milk until fluffy. Add all spices and whisk until combined.
  2. In a small pan, melt ghee over medium heat.
  3. Add onion, ginger, and jalapeño until fragrant
  4. Bring heat to the lowest setting.
  5. Add egg mixture
  6. Continuously stir with a wooden spoon.
  7. Plate eggs and sprinkle with cilantro

Akuri- India

  • 3 Eggs
  • 2 tbsp Milk
  • 1/2 Jalapeno

  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 tbsp ghee
  • Cilantro (chopped)
  • Toast (optional)
  1. Whisk eggs with milk until fluf.fy. Add all spices and whisk until combined

  2. In a small pan, melt ghee over medium heat.

  3. Add onion, ginger, and jalapeño until fragrant

  4. Bring heat to the lowest setting.

  5. Add egg mixture

  6. Continuously stir with a wooden spoon.

  7. Plate eggs and sprinkle with cilantro
