Summer Peaches

It’s peach season here in New York. So when I found 3 for a $1 in the local bodega, I knew it was time to experiment for my afternoon snack. This is a pretty simple take on the Fig recipe.  What’s your favorite summer snack? – Aheli

 

 

Grilled Summer Peaches

Ingredients:

  • 1-2 Peach(es)
  • Prosciutto (or bacon)
  • Kosher Salt
  • Balsamic Vinegar

Tools:

  • Carbon steel pan or grill
  • Clamps

Steps:

1. Heat the pan on medium-low

2. Cut peaches in half and remove pits. Brush peach halves with butter or oil (or ghee)

3. Place the peach halves on the grill. Cook each side for about 4 minutes

4. Let peaches rest then wrap in Prosciutto

5. Lay on the plate and drizzle balsamic vinegar

6. Finish with a sprinkle of sea salt

Variations:

  • Serve in a summer salad- arugula/spinach mix, heirloom tomatoes, chopped pecans/almonds
  • If you’re not a fan of Balsamic Vinegar- try maple syrup or honey

    Looks wonderful! I’ve also heard of adding figs to a peach/prosciutto combo, in case you need inspiration for next time (if we could arrange “next time” around me being in New York, I’d be HAPPY to taste test. Out of the goodness of my heart, obviously).
